Just a little about me and an Italian dressing recipe



I thought I would do a little update on what’s going on in my life… =) 

Still in school, with only 2 weeks left to go in this semester… YAY! Then I’m taking the summer off! Of course the last couple of weeks are usually the toughest because I have speeches and research papers due, but everything seems to be going fine in this area right now.

My husband and I started the Daniel fast yesterday, so I thought I might start sharing some of the recipes I use on here. For those who don’t know, it’s basically a vegan diet with more restrictions and it lasts 21 days.

Yesterday I made some delicious homemade Italian dressing! Here’s the recipe…

 

Italian Salad Dressing

1/2 cup extra-virgin olive oil

2 tablespoons fresh lemon juice

1 clove garlic, minced

1 teaspoon dried basil

1/2 teaspoon dried oregano

1/4 teaspoon salt

 

Instructions

Combine all ingredients in a blender. Refrigerate until chilled. Makes 1/2 cup.

 Aside from all of this, I’m still teaching piano lessons every week and loving it! I also took up some violin lessons myself! I’ve wanted to learn for a long time, but until recently there hasn’t been anyone around that could teach me. Someone came along, and I jumped at the opportunity to learn. It sounds awful right now and my poor husband usually wears headphones when I practice, but every time I play it gets a little better…. one of these days I’ll be able to play beautifully, but until then I’m going to continue screeching my way through Allegro because I am determined to learn!
Anyway… I hope everyone is having a blessed year so far! Can’t believe it’s MAY already! My 5 year anniversary is about two months away! Crazy!
